Coconut cake, flourless chocolate cake + my first virtual class!
Welcome to the Pancake Princess Substack era!
Happy Passover and Happy Easter!
I’ve never published two bake off posts within one week and yet…here we are. The urgency arose when multiple people messaged asking if I would have the flourless chocolate cake bake off up in time for Passover. And I am nothing if not a people pleaser!
I hope this double header gives some fun guidance as you decide on a flourless dessert for your Seder table or a show-stopping dessert for your Easter dessert table.
Before we get to the new posts, I have a little announcement:
I will be teaching my first-ever virtual class at The Bake Fest on May 20 and 21!
I’m nervous but excited! The Bake Fest is a virtual event packed with two full days of baking education, inspiration, and connection, and it’s truly a great resource for bakers of all levels. There will be virtual hands-on baking classes to baking demos, business and social media classes. Plus, recordings of all classes will be available for a full year!
In my class (“Anatomy of the Best Chocolate Cake”), I’ll be distilling everything I’ve learned about cakes after testing dozens (hundreds?) of recipes to help you bake your best ever cakes.
There are also tons of other amazing classes to choose from like Cake Writing, from Pen to Piping Bag, and Creating Your Own Line of Custom Products.
Early bird tickets for this event are on sale now for just $85 with my exclusive coupon code (thepancakeprincess15). That's a savings of $65 off the regular price of $150. It's an incredible value, especially when you consider that each class individually could cost $100+!
It's perfect for anyone looking to take their baking skills to the next level or looking to start or level up a baking business. Grab your ticket at thebakefest.com and I can't wait to see you there!
Okay, now to the latest bake off posts:
Best Flourless Chocolate Cake Bake Off
Behind-the-scenes context: This was by far one of the most relaxing bake offs I’ve ever done! I was staying with my sister in Cincinnati after attending a friend’s wedding in Columbus. We had been brainstorming a fun bake off to do while in Cincinnati and we ultimately settled on flourless chocolate cake to allow her gf friend to participate and to please her chocolate-loving partner.
Dividing the bake off into 2 days (baking 4 cakes the night before then 5 cakes the day of) was an absolute breeze with my sister and her partner helping with dishes! And hosting the bake off at a local brewery was so fun—I loved meeting local Cincinnati followers. I look forward to hopefully trying an in-person bake off at a brewery or other meeting spot in NYC soon!
Behind-the-scenes context: So many people asked why I didn’t test Ina Garten’s famous recipe! The answer: hers was relatively similar to Cheryl Day (but more butter) as well as Peninsula Grill (it’s roughly 2/3 the quantity of the PG recipe). I was more intrigued by PG’s use of heavy cream and Cheryl’s use of cream of coconut vs. Ina’s use of milk. So that’s why!
In any case, lots of delicious recipes to choose from in this bake off. Let me know if you end up trying a new recipe!
In case you missed it: here is the butter mochi bake off and I recently updated my favorite fluffy pancake recipe.
Thank you, as always, for reading! If there’s anything else you’d like to see in these monthly-ish newsletters, let me know.
